How to Cook Carrots in the Air Fryer (Keto Mediterranean Method)

The exact times and temps for every cut — plus why you don’t need honey, maple, or brown sugar to make them taste good.

Carrots go into my air fryer more than almost anything else I cook. They’re what I reach for when I want a side ready in under 20 minutes that doesn’t need babysitting, and they pair with practically every Mediterranean main I make.

But nearly every “air fryer carrots” recipe I tried when I started was built around honey, maple syrup, or brown sugar. That doesn’t work in a keto Mediterranean kitchen — and after cooking these hundreds of times, I don’t think it works flavour-wise either. Carrots are sweet enough on their own once the air fryer caramelises their edges. What they actually need is good olive oil, salt, and the right time and temperature for the cut you’re using.

Here’s the method I use every week, with exact timings for whatever shape of carrot is sitting in your fridge.

Quick Answer

Cook carrots at 380°F for most cuts — 12–15 minutes for baby carrots, 10–12 for coins, 18–20 for whole. Use 400°F only for thin sticks. Toss with 1–2 tsp olive oil per pound, shake the basket halfway, and don’t crowd it.

Most modern air fryers don’t need preheating for vegetables. If yours runs cool or you’re cooking straight from the fridge, give it 3 minutes at the same temperature first.

Why No Sugar — And Why You Won’t Miss It

Carrots already contain a reasonable amount of natural sugar, and the air fryer’s high, dry heat caramelises those surface sugars on its own. It’s the same browning reaction you’d get roasting them in an oven, just faster and with a better texture-to-time ratio.

Adding honey or maple on top doesn’t make them taste more like carrots — it makes them taste like candy, and it pushes a naturally low-carb vegetable out of keto range for no real flavour gain.

What genuinely improves them: a good extra virgin olive oil (it carries caramelised notes better than a neutral oil), flaky salt, and Mediterranean herbs added at the right moment. The specific blends I reach for are in Mediterranean Spices in the Air Fryer, and a finishing drizzle of ladolemono turns plain carrots into something you’d order at a taverna.

The Method, Step by Step

  1. Cut them evenlyUniform size matters far more than which shape you choose. Unevenly cut carrots give you burnt edges on the small pieces and raw centres in the thick ones by the time the basket comes out.
  2. Toss, don’t drownOne to two teaspoons of olive oil per pound is plenty. Air fryers crisp through moving hot air, not oil — too much just makes the basket smoke and the carrots greasy.
  3. Don’t crowd the basketThis is the single biggest reason air fryer vegetables come out steamed instead of crisp. Each piece needs air moving around it. Cooking for more than two or three people? Do two batches.
  4. Shake, don’t stirGrab the basket and shake it at the halfway mark, or pull the tray and toss with tongs. This is what browns multiple sides instead of just the bottom.
  5. Season again at the endA pinch of finishing salt and fresh herbs after cooking taste noticeably brighter than seasoning that’s been baking the whole time. Wet sauces like ladolemono always go on after, never before.

Troubleshooting soggy carrots: it’s almost always one of three things — too much oil, an overcrowded basket, or pieces cut too thick. Sticks and coins crisp better than whole carrots because they expose more surface area to the hot air. If you’re chasing maximum crispiness, cut thinner rather than cooking longer; extra time on a thick piece dries out the inside before the outside catches up.

Four Flavour Directions Worth Trying

Cumin & Smoked Paprika

Warmer and slightly smoky. Pairs well with grilled chicken or lamb.

Za’atar

Bright and herby — good alongside anything Greek-leaning.

Harissa & Lemon

More heat, more acid. Best when the rest of the plate is rich or fatty.

Olive Oil & Flaky Salt

Genuinely underrated. Good carrots don’t need much help.

Once the base method is second nature, Air Fryer Carrot Chips turns the same vegetable into a crispy snack, and Mediterranean Air Fryer Roasted Carrots leans harder into the EVOO-and-herbs direction if you’d rather follow a full recipe than a method. What to Serve Them With

Carrots cooked this way work as a side for almost anything in the 15 Anti-Inflammatory Keto Mediterranean Air Fryer Dinners collection — they run at a similar temperature to most of those mains, so you can often cook them in the same basket right after, or alongside if your model has two zones. A quick note on your basket

If you’re cooking vegetables in your air fryer most days — which is exactly what this method assumes — it’s worth knowing what the basket itself is made of. I dug into the PTFE and PFAS question for my own kitchen and wrote up what to actually look for in The Best Non-Toxic Air Fryer for Anti-Inflammatory Cooking.

Frequently Asked Questions

Do I need to peel carrots before air frying?

No. A good scrub is enough for most carrots, particularly organic ones. Peeling is a texture preference, not a food-safety requirement — and unpeeled carrots hold their shape slightly better through cooking.

Can I air fry frozen carrots?

Yes, with two adjustments: add 4–5 minutes to the times above, and skip the oil until after a quick 3-minute dry-out fry. Frozen carrots release extra moisture as they thaw, which makes oil pool at the bottom of the basket if you add it too early.

Why are my air fryer carrots soggy instead of crispy?

Almost always overcrowding or too much oil — both trap steam instead of letting hot air circulate. Cook in batches, and drop closer to 1 teaspoon of oil per pound if it keeps happening.

What temperature is best for air fryer carrots?

380°F works for most cuts and is the safer default if you’re unsure. Go up to 400°F only for thinner cuts like sticks or coins, where the shorter cook time means less risk of drying the inside before the outside browns.

Are carrots keto-friendly?

In sensible portions, yes. A medium carrot has roughly 4g net carbs — easy to fit into a keto Mediterranean day as a side, though not something to eat by the bagful. Cooking them without added sweeteners, as here, keeps them where they should be.

Can I make these ahead of time?

They reheat reasonably well at 380°F for 3–4 minutes, though never quite as crisp as fresh. I wouldn’t meal-prep them more than two or three days ahead.
